Mediterranean Meatballs and Tzatziki Sauce

Looking for an easy appetizer to bring to a party?  Meatballs are the perfect choice.  You can throw them in a crockpot to stay warm and just bring the Tzatziki Sauce to serve later.

 

I just had my fortieth birthday and we had a big bash!!!  These meatballs were one of the appetizers that were served.  They were a hit.  Everyone loved them.  They are good all by themselves, but when you add in the Tzatziki Sauce you just go to another level of deliciousness.  Even the kids like them.  You can also make these meatballs ahead and throw them in the freezer.  When you are ready to take them to a party or serve them at your own house, just take them out and throw them in a crock pot to bring to a warm temperature.  The sauce is easy to make as well.  So it’s not a very time consuming recipe.  Love it!!

 

What You Need For The Meatballs

You will need ground beef, a yellow onion, fresh minced garlic, eggs, parsley, gluten free panko crumbs, cumin, oregano, cinnamon, salt, pepper, and 2 cups of tzatziki sauce (recipe follows).

 

How To Make The Meatballs

Heat the over to 400 degrees.  Line two large sheet pans with parchment paper.  Grate the yellow onion and chop the parsley (set some parsley aside to garnish with later).  Combine the beef, onion, garlic, eggs, parsley, panko crumbs, cumin, oregano, cinnamon, salt, and pepper in a large bowl.

Mix well.  Then take a cookie scoop and place the meatballs on the prepared sheet pans.  You should have about 2o-25 meatballs per sheet depending on the size of your scoop.  You could also wet your hands and form golf ball sized balls (about 2 tablespoons each).

Place in the preheated oven and bake for about twenty minutes.  You will want to rotate the pans halfway through to cook evenly.  They should be golden brown and cooked all the way through.  You can always test them with a meat thermometer.  They need to be 165 degrees Fahrenheit to be fully cooked.

While those are cooking let’s make the Tzatziki Sauce!!!

What You Need For The Tzatziki Sauce

You will need a large cucumber or a few baby ones, whole milk greek yogurt, lemon juice, olive oil, fresh minced garlic, salt, fresh dill, and fresh mint.  You will also need a box grater and a clean kitchen towel.

 

How To Make The Tzatziki Sauce

Use the box grater to grate the cucumbers.  Then put the grated cucumber in the clean kitchen towel and gently squeeze out a bunch of the excess water.  You can also use your hands to squeeze out the water.  But I towel works better.  If you leave too much water in it the sauce will be runny.

Next, grab a medium bowl and combine the cucumber, yogurt, lemon juice, olive oil, garlic, salt, chopped dill, and chopped mint.

Mix it up well and set it in the fridge to chill.  Once your meatballs are cooked all the way through serve them immediately with a dollop of tzatzik sauce.  A yummy appetizer to bring to a party or serve at your house during a football game!!
