Herb Glazed Carrots

If you want a fresh, healthy side that has a little bit of sweetness to it these carrots are perfect.  With Fresh herbs, local raw honey, and a little bit of heat from your oven, you have a delicious side to serve.

I love carrots.  But a lot of the time I purchase a huge bag of them, cause they are so cheap, and I never use all of them.  I also love roasted vegetables.  So one day I took my extra carrots out of the fridge, before they went bad, tossed a few herbs on them and put them in the oven to roast.  They would be delicious just like that.  However, I decided to add a few extras.  Some fresh herbs and honey.  Delicious!!!!!

 

What You Need

You will need gourmet carrots, avocado oil, dried thyme, salt, pepper, salted butter, honey, apple cider vinegar, dijon mustard, fresh parsley, and chives or green onions.

 

First Roast the Carrots

Preheat your oven to 400 degrees while you get the carrots ready to roast.  I suggest using gourmet carrots, but if you are using regular carrots make sure to quarter them and cut them to about 4″ long.  Put all of the carrots in a large bowl and drizzle with avocado oil.  Then sprinkle them with the thyme, salt and a little pepper.  If you want to use fresh Thyme I would use about one tablespoon chopped up.  Then toss them.

Place the carrots on a parchment lined baking sheet and spread them out evenly.  (Save the bowl for later!!!). Roast the carrots for 20-30 minutes (depending on size) until tender and browned.

Meanwhile, melt the butter in a small saucepan over medium heat.  Whisk in the honey, vinegar, and a pinch of salt.  Bring it to a boil and make sure to stir often.  Cook until slightly thickened, 1-2 minutes.

Remove the mixture from the heat and whisk in the mustard, then the chopped parsley and chives.  You can also use green onions.  Depending on the time of year you will not find chives.  I love the taste of fresh chives but the green onions do the trick as well!!  Reserve a tablespoon of each herb for garnish at the end.

Once the carrots are tender and browned, transfer them to the reserved bowl.  Drizzle the carrots with the honey mixture and stir well.  Just transfer them to a serving bowl and sprinkle with reserved herbs.
